To retain varietal character the grapes are harvested in the cool of the night and gently pressed. The juice is then immediately chilled and racked before fermentation in stainless steel and 30% in seasoned French oak barriques for added complexity. It is then left on gross lees for 6 weeks with periodic stirring to develop palate complexity and texture. Finally the wine is racked and cold stabilised before bottling.

Tasting notes

This alternative style sauvignon blanc shows great intensity. The bouquet displays flint, peach and citrus characters. The complex palate is dry and has an array of stonefruit flavours melded with nutty, spicy and smoky oak elements. A textured wine with a clean focused finish.
